Fermentation:  The grapes were whole cluster pressed, and the juice was sent to ferment in new French oak barrels. Once finished, the wine was racked to eliminate the heavy lees and remained in the same barrels for malolactic fermentation and ageing.
Aging: Aged 16 months in one year old French oak barrels.

The 2015 has big shoes to fill as it follows up the highly-acclaimed and well-awarded, "Best White Wine", 2014 vintage. More Burgundian in style, the sophisticated and nuanced 2015 vintage demonstrates the elegance and structure one can obtain from the ancient soils of Certenberg Vineyard.

Aromas of peach skin, smoked pineapple and lemon Danish with flavors of yellow peach, pineapple pith, meyer lemon, and a hint of brioche, finishing with a lively, stony minerality that lingers. A perfect balance of intensity and restraint are present in this charming wine.

The Certenberg Chardonnay is a lovely match for rich fish or lobster dishes, savory poultry preparations, aged Cheddars, and would be just fine with popcorn laced with truffle oil.
