This Chardonnay exhibits the full potential of this wonderful grape variety when it is grown in Texas. “Sur-lie” ageing in a stainless steel tank where its lees, dead yeast cells basically, were regularly stirred and re-suspended, allowing the flavor and aroma molecules to integrate into the wine. After 5 months the wine was ready for bottling. It’s a very distinctive wine which exceeds the classic character with a layer of minerality of clay and chalk, exhibiting, also, an interesting note of roasted almonds and peanuts. Once in the mouth it is refreshing, full of flavor, with a nice, luscious, long, and inviting finish.
